Fun With Phyllo

I just made a Broccoli Strudel from my new favorite cookbook, The New Moosewood Cookbook (see previous post for author, I don't remember off the top of my head...all I know is that she's genius). I've only made something with phyllo once before and it was long enough ago that I'd forgotten how much it sucks. Phyllo hates me. The meal was good but the effort, let's just say I needed to eat the whole darn thing just to replenish the calories expended trying to painstakingly layer, oil, layer, oil, layer, oil, layer, oil, layer and oil the sheets (times two). Imagine being the sucker in a restaurant who has to make strudel or spanokopita or whatever? Hey Johnny, you were late today...phyllo duty! You can be darn sure Johnny won't ever be late for work again. Excuse me now while I go finish my dinner and enjoy the fruits of my labor.
